Bay (herbs of your choice)
Sea salt & pepper
Rub chicken with olive oil or butter and season well with sea salt and freshly ground black pepper.
Squeeze half a lemon over the chicken and place in cavity with 6 whole cloves of garlic, carrot chunks, celery and herbs of your choice – we like bay and thyme.
Place in 200’C pre-heated oven breast side down for 20 min sizzle, reduce oven to 170’C turn chicken over and baste, if you have time baste again then leave until cooked.
Cooking times vary for weight, approximately 50 minutes for a bird that is 1.8kg, 80 minutes for a 2.5kg bird. Check that juices run clear (pink is fine so long as there is no blood)
Rest on a warmed plate breast side down under foil for 25 mins before serving.
