The Fosse free range bronze turkey is generous and delicious, with succulent marbled meat and an exceptionally rich flavour.

Our traditional strains of bronze turkeys are slow-reared for around twice the length of time as commercial turkeys. They arrive from Kelly Bronze’s Farmgate Hatcheries as day-old poults and are naturally grown to a maturity of 6 months.

Our turkeys spend a greater amount of time free-ranging and foraging on pesticide-free grassy pastures, which allows them to put down a nice layer of natural fat. They develop a deep, rich flavour and succulent texture due to themarbling of the meat. So never again will you experience dry turkey!

As with Christmas cockerel, the Christmas goose was enjoyed as a popular choice for a delicious Christmas meal up until the 16th Century, before the introduction of turkey. Our Norfolk goose is such a luxurious bird to enjoy together.  

Our free range geese are like the cows of the bird world. They’re truly free ranging having full access to acres of our clover-rich and pesticide-free pastures and are topped up with home-grown wheat without any additives or growth promoters. Our geese are slow grown to a maturity of 6-7 months to develop natural marbling of the meat, and a beautiful fat layer under the skin. Everything they say about the crispy skin is true and the rich, dark meat is simply delicious. 

Our geese are dry plucked and game hung for 7-10 days before dressing. 

Comes with giblets, goose fat, cooking instructions and a pop-up timer.

Clearly a quality animal, with a tasty overall flavour profile. The leg meat is rich and sweet, retaining good moisture. Lovely intense depth on the nose and a really lovely looking bird. There is a lovely sweetness to the meat along with a soft almost perfumed note which is delightful. Great colour to the skin, visibly moist and a lovely savoury, slightly gamey aroma. Good ratio of fat to meat. A very impressive bird!

We’re keen to inspire the cooking of cockerels. The Fosse free range and slow-grown cockerel offers juicier, bolder, and more generous meat than a chicken, with a rich gamey flavour – simple.   

We use same 3 strains of the traditional French breed for our chickens as we do our cockerels and slow grow them to a maturity of 112–140 days. The length of time we give our birds to reach maturity being fed on a natural cereal based diet helps to develop strong nutritious bones, and darker flesh with a rich flavour and meaty texture. 

We really think that people have forgotten how good this bird is.

This is so obviously a well looked after and loved cockerel. The meat is exceptional and full of flavour. The texture is perfect. It’s moist and juicy. Lovely thick skin which cooked beautifully and produced crispy and flavoursome morsels. The fact that it’s grown to at least 120 days means the bone marrow and skeleton have had time to develop and add to the flavour. Absolutely fantastic. Utterly and exceptionally scrumptious! The difference between a well reared bird, of good heritage, grown to maturity and well fed, treated and prepared shows on the palate.
