Totally free ranging and slow-growing

At Fosse Meadows Farm we grow our birds slowly and traditionally. The Fosse bird is totally free ranging and grown naturally in small flocks to a minimum of 81 days. That’s three times longer than standard commercially-reared supermarket chicken, and two weeks longer than organic birds.

Like the much-admired French chicken, we use three strains of French breeds and grow them to full maturity. This means our birds have longer legs, allowing them to roam and forage on rich, wildflower pasture. They are fed a cereal-based diet that is locally sourced where possible, with no antibiotics, additives or hormones.

Fosse chicken simply has richer and more succulent meat, with stronger, nutritionally-rich bones too. Just how chicken should, and used to, taste.

Bountiful 2.6kg typically feeds 6 people

Prepare your bird
  1. Bring to room temperature.
  2. Rub with olive oil or butter and season well.
  3. Squeeze half a lemon over the chicken and place the squeezed lemon in the cavity along with 6 cloves of garlic and herbs of your choice – we like bay and thyme.
Cook your bird
  1. Place in 200 degree pre-heated oven, breast-side down, for 20 mins to sizzle.
  2. Reduce oven to 170 degrees, turn and baste.
  3. Cooking times vary with weight: appox 50 mins for 1.8kg and 80 mins for 2.5kg. Juices will run clear when cooked.
  4. Once cooked, rest on warm plate under foil, breast-side down, for 15-20 mins before serving.
What to do with the giblets
  1. Place giblets in a mini casserole dish with your leftovers in the fridge e.g. celery, carrot, half an onion, bunch of herbs (thyme, bay and parsley go well!)
  2. Cover with cold water and place in the oven along with the chicken and cook for the same time and temperature. Simple!
  3. Once the chicken is resting out of the roasting pan, add the mini giblet stock.
  4. Bring juices to a sizzle on the hob and reduce and strain for a delicious chicken gravy.
