When deciding to develop a cured meat range it was important to us that we chose a producer that shares the same values we hold dear. Redhill pork of Gainsborough in Lincolnshire (a county synonymous with producing the best quality pigs) have one of the highest welfare, free range pig rearing systems in the UK. As with all our own poultry & lamb we understand happy & healthy animals produce a much greater meat quality & the slowly reared older pigs specially selected for us produce a much darker & more flavourful meat. We also believe in keeping things simple & letting the quality of the meat speak for itself, so when it comes to the curing process, we just use our own blended curing salt with a little sugar which delivers a hint of sweetness & a touch of caramelisation during the cooking process. After their time in cure all our bacons & gammons are hung for a week, some will be treated to our gentle beech & oak smoke before being aged for a further 21 days to allow the flavour to further develop.
