Cockerel is ideally what you want for this dish, but a large chicken (or even just legs and thighs) are fine too.
Sorrel adds a unique grassy sharpness to salads and dressings, but it can be hard to come by. You could use watercress instead, for a very different, yet still delicious, result.
If you prefer, substitute the Turkey breast with Chicken breast.

This recipe looks complex, but is quite straightforward. Everything except roasting the goose and making the sauce can be done the day before and heated through before assembling the dish. Eat it with roast potatoes or a potato gratin.

This is a great alternative to a traditional sandwich and is substantial enough for supper.
I know it might sound a bit of a faff, but take it from me that stuffing a whole double breast joint is very much easier than stuffing and rolling a single breast joint, as is more commonly found in supermarkets. Basically, all you’re doing here is opening out your boneless turkey joint, smothering it with stuffing and folding it over. What you end up with, for all the ease of its creation, is nothing short of a showstopper.
